BOO-Nana Pops

These yogurt-dipped banana popsicles in the shape of ghosts or mummies make for delicious Halloween treats that are healthy and fun to make. Great for kids (and adults too)!


Bananas are so versatile and are great for snacks. Paired with the yogurt, this snack is well balanced. It provides protein and fat from the yogurt and healthy carbohydrates from the bananas.

Ingredients


For the banana ghosts:

  • 4 Large Bananas

  • 1 cup dairy-free vanilla yogurt, or yogurt of choice (I used Siggi's coconut plant-based yogurt)

  • 2 tablespoons powdered sugar (optional)

  • Semi-sweet chocolate chips or raisins (for eyes - I used mini)

For the banana mummies:

  • 1/3 cup creamy peanut butter (or other nut butter/Sunbutter)

Tools You Will Need

  • Baking sheet

  • Parchment sheet (unless wrapping with plastic wrap)

  • 10 popsicle sticks

Instructions


1) For the Ghosts: Line a large baking sheet with parchment paper. Peel 2 bananas and slice each in half, cross-wise. Carefully insert a popsicle into the bottom of each, then place on the baking sheet.

2) For the Mummies: Cut the pointy tips off the 2 remaining bananas, then slice the bananas cross-wise into 3 equal round "logs." Insert a popsicle stick into one end of each, then place on the baking sheet. Freeze all banana pops for at least 30 minutes or overnight.

3) Place the yogurt in a small bowl (mix in sugar, if using). Once the bananas are frozen, dip them into the yogurt mixture until fully coated, then return to the lined baking sheet. Place 2 mini chocolate chips or raisins on each of the ghosts for eyes. Do not place the eyes on the mummies yet. Return to the freezer for at least 1 hour for the yogurt to set.

4) For the mummies, place the peanut butter in a small, microwave-safe bowl, then heat until smooth and creamy, about 30-45 seconds, stirring as needed. With a small spoon, drizzle on top of the banana mummies to make "bandages." Place mini chocolate chips or raisins for eyes. Return to the freezer until the peanut butter is firm, about 30 additional minutes.

5) When ready to serve, let the banana popsicles soften at room temperature for a few minutes. Enjoy immediately, or place in a zip lock bag and freeze up to 2 months.

Notes:


- Banana pops can also be wrapped in plastic wrap and put in the freezer instead of using a baking sheet.
