Delicious chickpea "tuna" is super simple to put together and can be enjoyed in a sandwich, salad, lettuce wraps or with crackers - or any other way you would normally eat tuna salad! This hearty plant-based tuna captures the savory and tangy flavor of a classic tuna salad for an easy meal the whole family will enjoy.
Chickpeas are legumes and are packed with plant-based protein and fiber. They are a rich source of vitamins and minerals including iron and folate. Chickpeas are anti-inflammatory, can improve digestion, and can support healthy blood sugar levels.

Ingredients
1 (15 oz) can chickpeas, rinsed and strained
Lemon juice from 1/2 small lemon, to taste
3 tablespoons hummus, avocado, or vegan mayo
2 teaspoons vegetable oil
1.5 teaspoons dijon mustard
1 celery stalk, thinly sliced
1 tsp dried dill (or 1 tbsp fresh dill, minced)
1 green onion, finely sliced (optional)
1/4 - 1/2 teaspoon salt, to taste
1/4 teaspoon black pepper (optional)
For serving
Dill pickles (optional, but recommended)
Toast/Sandwich bread if making sandwiches (gluten free bread if desired)
Sandwich toppings or salad ingredients such as tomato, lettuce or spinach
Tools You Will Need
Potato masher or fork
Large mixing bowl
Strainer
Instructions
1) Mix strained chickpeas, lemon juice, hummus/mayo/avocado, vegetable oil, and Dijon mustard together in a large mixing bowl.
2) Use a potato masher or fork and mash the chickpeas to your desired consistency.
3) Stir in the celery, dill, green onion (if using), salt, and black pepper. Taste and adjust seasoning as needed. Enjoy!

As a vegan, I am always looking for quick, high protein ideas for lunch. This one for mock tuna salad is easy and delicious. It is also versatile: I have made it as a sandwich with different kinds of bread or as part of a salad plate, with equal success. I love sweet dill pickles so I now put it directly in the salad! Yum!
