Greens are super nutrient dense. They are low in calories and packed with important vitamins and minerals like calcium, vitamins A, C, and K. Greens are also a great source of fiber.

Ingredients
1 large bunch of collard greens, stems removed and thinly sliced
1.5 tbsp vegetable oil
2-4 medium cloves garlic, pressed or minced
1/8 tsp salt, to taste
Pinch of red pepper flakes (optional)
Lemon wedges, for serving

Instructions
1) Rinse the collard leaves. Carefully cut out the thick center stem. Stack the stemless leaves, roll them up, and slice them thinly. Mince the garlic.
2) Heat the vegetable oil in the skillet on medium-high heat. Once heated, add in the garlic and cook until fragrant, 1-2 minutes.
3) Add the greens and cook, stirring often, until the greens are wilted and tender, about 5 minutes. Remove from heat and season to taste with salt, lemon, and red pepper flakes (if using). Enjoy!
