Best Vegan French Toast

Looking for an egg-free twist on a classic French toast breakfast? This recipe is simple and most importantly absolutely delicious. Fluffy on the inside and browned to golden perfection on the outside. This recipe works with many types of bread but I recommend sourdough for the best flavor.

Did you know French Toast was not actually invented in France? It is thought that people have been making some variation of French Toast since the Roman Empire!

Prep Time: 25 - 40 minutes

Cook Time: 16 minutes

Total Time: 40 - 55 minutes


Ingredients

  • 8 slices of sturdy bread (sourdough recommended)

  • 1 cup JUST Egg

  • 1/2 cup milk of choice (soy, etc)

  • 2 tablespoons sugar

  • 1 teaspoon vanilla extract

  • 1 teaspoon ground cinnamon

  • Small amount of neutral vegetable oil (coconut, avocado, etc) or butter, for oiling the pan

  • Your favorite toppings and sides (maple syrup, berries, powdered sugar, sautéed greens, plant-based breakfast sausage, etc)

Tools You Will Need

  • Baking sheet (if drying out the bread)

  • Whisk

  • Non-stick or cast iron pan

  • Fork or tongs

  • Spatula to flip

Instructions

Dry out the bread


1) If bread is not yet stale, lay it out on a baking sheet overnight to dry it out, or bake it for 10-15 minutes at 300F until stiff and dry (check after 10 minutes). Using stale/dry bread will help soak up the custard and avoid soggy French toast. If bread is already old, skip this step.


2) Whisk the custard. In a bowl, whisk together the JUST Egg, milk of choice, sugar, vanilla extract, and cinnamon.

3) Pour the custard over the slices of bread (either directly on the baking sheet you used to dry them out, or in a separate shallow dish). Soak the bread for 15-30 minutes, flipping halfway through. After soaking, make sure there are no dry spots on the bread. Mop up some additional custard with the bread if needed.


Fry the toast


4) Bring a non-stick skillet or cast iron pan to medium-low heat and brush with a light coasting of oil or butter. Use a fork or tongs to pick up each slice of bread from the soaking dish, letting any excess custard mixture drip off. Cook each slice for about approximately 2 minutes on each side, until browned. Serve immediately with your favorite toppings.
