Sweet Potato Jack-O-Lanterns

Halloween doesn't only mean sweet treats! This delicious baked sweet potato recipe creates healthy veggie chips in a snap. These festive snacks are a great treat that everyone in the family can enjoy.

Sweet potatoes are a great source of complex carbohydrates and are full of vitamins, minerals, antioxidants, and fiber. One half cup of sweet potatoes contains approximately 800% of daily needs for Vitamin A and 4g of fiber.

Prep Time: 25 minutes

Cook Time: approximately 35 minutes (more or less depending on thickness of slice)

Ingredients

  • 1 pound sweet potatoes (about 1 large sweet potato, or 2 medium)

  • 2-3 tbsp vegetable oil

  • Salt, to taste

Tools You Will Need

  • Baking sheet

  • Parchment sheet

  • Basting brush


Instructions


1) Preheat Oven to 450 F


2) Peel potato and slice into 1/4 inch discs.


3) Place potato discs in a pot with plenty of cold water. Bring the water to a boil and simmer for 8 minutes. Drain the potatoes and let cool enough to handle. Use a paring knife to cut triangle eyes and a mouth on each disc, or use cookie cutters.


4) Place parchment paper on a baking sheet and transfer potato discs to the baking sheet ( (try not to overcrowd them, do two batches if necessary). Brush with oil and sprinkle with salt.


5) Place the baking sheet in the oven and bake for 15-30 minutes or more, until the edges are golden brown. Check often as thickness of slice and different ovens will vary the total cooking time.
